We will find both time and money saving meal ideas. Recipes will be focused on the weekly deals and coupon matchups that can be found around the country as well as locally.

Grilled Chicken with Chipotle-Peach Glaze
Ingredients:
1/2 cup peach preserves
1/4 cup lime juice
1 canned chipotle chile in adobo sauce, seeded, chopped
1 teaspoon adobo sauce (from can of chiles)
2 tablespoons chopped fresh cilantro
8 boneless skinless chicken breasts (about 2 1/2 lb)
1 teaspoon garlic-pepper blend
1/2 teaspoon ground cumin
1/2 teaspoon salt
4 peaches, cut in half and pitted,
if desired Cilantro sprigs

Directions:

1. Heat gas or charcoal grill. In 1-quart saucepan, mix preserves, lime juice, chile and adobo sauce. Heat over low heat, stirring occasionally, until preserves are melted. Stir in chopped cilantro; set aside. Sprinkle chicken with garlic-pepper blend, cumin and salt.

2. Place chicken on grill. Cover grill; cook over medium heat 15 to 20 minutes, turning once or twice and brushing with preserves mixture during last 2 minutes of grilling, until juice of chicken is clear when center of thickest part is cut (170°F). Add peach halves to grill for last 2 to 3 minutes of grilling just until heated.

3. Heat any remaining preserves mixture to boiling; boil and stir 1 minute. Serve with chicken and peaches. Garnish with cilantro sprigs

Hazelnut Crinkles
Ingredients:
3/4 cup granulated sugar
3/4 cup hazelnut spread with cocoa (from 13-ounce jar)
1/2 cup butter or margarine, softened
1/2 teaspoon vanilla
1 egg
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons white decorator sugar crystals or granulated sugar

Directions:

1. Heat oven to 375°F. In large bowl, beat granulated sugar, hazelnut spread, butter, vanilla and egg with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda and salt.

2. Shape dough by rounded teaspoonfuls into 1-inch balls. Roll in sugar crystals. Place about 2 inches apart on ungreased cookie sheet.

3. Bake cookies 7 to 9 minutes or until puffed and edges are set. Cool on cookie sheet 1 minute. Remove from cookie sheet to wire rack; cool.

Grilled Spanish Chicken Supper
Ingredients:
3 medium unpeeled baking potatoes, cut into 1/2-inch cubes (4 cups)
2 medium green or red bell peppers, chopped (2 cups)
1 large onion, coarsely chopped (1 cup)
12 large pimiento-stuffed olives, coarsely chopped
1 can (14 1/2 ounces) diced tomatoes with roasted garlic, undrained
1 tablespoon all-purpose flour
3 teaspoons chili powder
1 teaspoon salt
1 1/2 pounds chicken breast tenders (not breaded)

Directions:

1. Heat coals or gas grill for direct heat. In large bowl, mix potatoes, bell peppers, onion, olives and tomatoes. Stir in flour, 2 teaspoons of the chili powder and 1/2 teaspoon of the salt. Spoon mixture into large heavy-duty aluminum foil bag.

2. Sprinkle remaining 1 teaspoon chili powder and 1/2 teaspoon salt over chicken. Arrange chicken on top of vegetables. Double-fold open end of bag. Slide foil bag onto cookie sheet to carry to grill.

3. Slide foil bag onto grill. Grill uncovered 4 to 5 inches from medium-high heat about 20 minutes or until potatoes are tender and chicken is no longer pink in center.

Rio Grande Pot Roast
Ingredients:
1&1/2 cups thick-and-chunky salsa
1 cup beer or water
1 can (6oz) tomato paste
1pkt (1.25 oz) taco seasoning
1 3lb boneless beef bottom round roast
1/2 tsp each salt and pepper
2 Tbsp peanut butter
1/3 cup chopped cilantro

Directions:
1. Mix first 4 ingredients in a 5-qt or larger slow cooker. Rub beef with salt and pepper; add to cooker. Spoon some sauce mixture over top.
2. Cover and cook on low 8 to 10 hours until beef is very tender. Remove meat to a cutting board. Stir peanut butter and cilantro into sauce. Slice meat against the grain; serve with the sauce.

I found this recipe in the Woman's Day Magazine Volume No. 70 Issue No. 14 pg. 122.

Frozen Moose Triangles
Ingredients:
41/2 chocolate graham crackers
1 1/4 cups milk
1/4 tsp. mint extract
2 boxes (2.8 oz each) milk chocolate European Style mousse mix
1 cup miniature marshmallows

Directions
1. Line an 8-in. square pan with foil, letting foil extend about 2 in. over ends. Arrange graham crackers over bottom, cutting to fit.
2. Stir milk and mint extract in large bowl. Add mousse mix and prepare as package directs.
3. Spoon 1 cup mousse over graham crackers. Evenly sprinkle with marshmallows and spread with remaining mousse. Cover and freeze overnight.
4. Lift foil by ends onto cutting board. Cut in 9 squares, then half diagonally to make triangles. Remove from foil.

Pasta Recipe

I know it is not Menu Monday but I came accross this recipe on one of my favorite sites 5$ Dinners and thought it sounded like a very yummy, very easy meal that the whole family would enjoy.

Garden Pasta Primavera

Ingredients
16 oz. rotini pasta
2 chicken breasts, diced
1 summer squash
1 zucchini squash
about 1 cup grape tomates
Handful of sugar snap peas
2 Tbsp butter
2 Tbsp flour
2-3 cups milk
2 tsp red wine vinegar
Salt and pepper

Directions
1. In large saucepan, cook pasta according to package instructions. Drain in colander. Do NOT return to saucepan!
2. While pasta is cooking, dice the chicken breasts and cut the zucchini, squash, grape tomatoes and snap peas.
3. Once pasta is out of the saucepan, prepare cream sauce. Melt 2 Tbsp butter (I used a dairy-free variety).
4. Once melted, add in 2 Tbsp flour and 1/2 tsp salt. Use whisk to mix it into a paste.
5. Once paste has formed, quickly add in 2-3 cups of milk (I used rice milk to stay dairy-free!). Whisk well until the pasty clumps have dissipated into the milk. Cook over medium heat for 2-3 minutes, or until starts bubbling.
6. Once bubbling, the sauce is ready for a few mix-ins.
7. Add 2 tsp red wine vinegar, crushed garlic, cracked pepper, diced chicken.
8. Add about 2-3 Tbsp water in with the chicken, so the sauce doesn’t get too thick. Stir often while the chicken cooks through, about 4-5 minutes (depending on how thick the diced chicken pieces are!).
9. Once chicken has cooked through, mix in the cut vegetables. Cover and let cook for 4-5 minutes, or until vegetables have steamed.
10. Mix in cooked pasta. Season with salt and pepper, to taste.
11. Serve Garden Pasta Primavera in one bowl. With one spoon!

Tamale Pie
Serves: 3-4

Ingredients:
1 1/3 c. water
1/2 c. cornmeal
1/2 c. cold water
1/4 t. salt
1/2 lb. lean ground beef
1/2 c. chopped onion
1/2 c. chopped green pepper
1 clove garlic, minced
1 1/4 t. chili powder
3/4 c. canned diced tomatoes w/juice (about 1/2 of a 14.5 oz. can)
1 c. whole kernel corn, canned or frozen
2 T. black olives,
chopped1/2 c. (2 oz.) shredded cheddar cheese

Directions:
Bring the 1 1/3 cups of water to a boil in a small sauce pan. In a small bowl, mix together the corn meal, 1/2 cup water and salt. Slowly add the cornmeal mixture to the boiling water, stirring constantly. Cook and stir until mixture returns to boiling; reduce heat.
Cook over low heat for 10-15 minutes or until mixture is very thick, stirring occasionally. Pour 3/4 of the cornmeal mixture into a lightly greased 10 x 6 baking dish. Cover and chill about 30 minutes or until firm.
Cover remaining cornmeal mixture and set aside.
In a large skillet, cook beef, onion, pepper and garlic until meat is browned; drain. Stir in chili powder, cook 1 minute. Stir in tomatoes, corn and olives. Spoon meat mixture on top of chilled cornmeal mixture in the baking dish. Spoon remaining cornmeal mixture into 8 mounds over meat.
Bake at 350 degrees for 30 minutes. Sprinkle with cheddar cheese during last 5 minutes.

Chicken Potato Bake
Serves: 4

Ingredients:
2-3 lbs. chicken pieces, skin removed
1 lb. red potatoes, cut into chunks
2/3 c. Italian salad dressing
1 T. Italian seasoning
1/2 c. grated Parmesan cheese

Directions:
Place chicken pieces in a greased 13 x 9 baking dish. Arrange potatoes around chicken. Drizzle with dressing; sprinkle with Italian seasoning and Parmesan cheese. Cover and bake at 400 degrees for 30 minutes. Uncover and bake 15-20 minutes longer or until potatoes are tender and chicken juices run clear.

Back from Vacation...craving muffins

This has been a busy summer! I have more catching up to do after taking the week off to enjoy a family vacation. We ended up going to Sea World in San Antonio. As usual I checked for coupons first and ended up getting a great discount for the whole family! After several searches the best find was from retailmenot.com. I highly recommend this site for any coupons searches. You can find anything from restaurant deals, coupons and discounts on shopping, even traveling.


During our vacation I was able to visit my cousin Rachel, the owner of the main blogsite, Cha Ching Queen. She made some amazing muffins and I have been craving muffins ever since. I still need to get her recipe but in the mean time her is a yummy recipe I just found on $5dinners.com

Almond, Raspberry and Blueberry Muffins

Ingredients
4 eggs
1/4 cup oil
1/4 cup applesauce
1/2 cup white sugar
1/3 cup brown sugar
1 tsp vanilla
1 tsp baking soda
2 tsp baking powder
1 tsp ground cinnamon
1 cup whole wheat flour
1 cup white flour
1 cup blueberries
1 cup raspberries

Almond Struesel
1/3 cup ground almonds
1/3 cup brown sugar
1 tsp cinnamon
1/3 cup butter or margarine, softened

Directions
1. In stand mixer or mixing bowl, stir eggs, oil, applesauce, white sugar, brown sugar and vanilla. Add baking soda, baking powder, cinnamon, wheat flour and white flour. Mix until batter forms and is no longer lumpy. Add blueberries and raspberries.
2. Carefully fold in blueberries and raspberries with plastic spatula.
3. In small bowl, mix ground almonds, brown sugar and cinnamon. Using a pastry blender, cut in butter or margarine.
4. Add batter to muffin cups and top each muffin cup with 1 tsp of almond struesel.
5. Bake at 350 for 15-20 minutes, or until toothpick comes out clean.
6. Let cool on cooling rack. Serve warm with butter.

Makes 12 regular sized muffins.



Catching Up....

I am playing catch up today because this has been a very busy week including a trip to the Great Wolf Lodge for a quick family vacation. We had a blast and I am so glad we were able to use a coupon to save money on our stay. Needless to say I have some catching up to do.

For Menu Monday (June 29) :

I found some yummy recipes from 5$ Dinners.
With this summer heat it is sometimes hard to sit down to a warm dinner. This is a great recipe for a dinner that is good warm or cold.

Balsamic Chicken Pasta Salad
Ingredients:
3 cups rotini pasta noodles
1 package chicken tenderloins
1 cup balsamic vinaigrette dressing, divided
2 carrots
1 green pepper
1/2 zucchini
Fresh basil
Fresh parsley
Salt/Pepper, to taste

Directions:
1. In medium saucepan, cook pasta noodles according to package instructions. Drain and rinse with cold water. Add to serving bowl with 1/2 cup of balsamic vinaigrette dressing.
2. Place chicken tenderloins (dice them first if you like…I didn’t, because I find it easier to cut cooked chicken than raw chicken) into medium skillet with other 1/2 cup of balsamic vinaigrette dressing. Saute for 4-5 minutes each side, or until tenderloins are no longer pink in the middle.
3. Meanwhile, peel and chop carrot. Core, seed and dice green pepper. Dice 1/2 of a large zucchini. Chop fresh basil and parsley.
4. Once chicken has cooked through, toss veggies with chopped fresh basil and parsley into the skillet with the chicken. Add 1/2 - 3/4 cups of water.
5. Cover and let steam for 4-5 minutes, or until zucchinis become translucent. Once steamed, take “sharp” metal spatula or knife and cut the chicken tenderloins into bite size pieces.
6. Once cooked, toss chicken and veggies with pasta and dressing. Season with salt and pepper to taste. Optional: Add a few shakes of Parmesan cheese to each serving. Serve warm or refrigerate at least 2 hours and serve chilled.
7. Serve Balsamic Chicken Pasta Salad.

July 4th Smoothie
Ingredients:
1 banana
1 cup of milk, rice milk or yogurt
6 large strawberries
About 1 cup blueberries
2 Tbsp ground flaxseed (optional)
2 Tbsp favorite sweetener, like honey, agave syrup or sugar
Enough water to cover all the fruit (about 3-4 cups)

Directions:
1. Add all ingredients and blend until smooth.
2. Drink and Enjoy!

Tell About it Tuesday (June 30):

Tuesday we went to The Great Wolf Lodge. I highly recommend going there for a fun family vacation but with the warning that you need to come prepared to play not to rest. We had a blast and really enjoyed our stay. We also enjoyed driving around Historical Grapevine, TX. If you plan on going to The Great Wolf be sure to stop by the dallas coupon bank for a 20% off discount first. Also I would not recommend buying a "Pup Pass." The pass is for a stuffed animal, T-shirt, 2 free drinks and souvenir cups, and 20 game tokens. Really you can get more for your money without purchasing the pass. Next time we go we will also plan on bringing more food from home to save money especially with a refrigerator and microwave in every room.

Here’s a great article about Deal Sharks (the best online shoppers). The key is to use malls and physical stores to look at a product and make sure it is what you want, but then buy the product online. Research is also important. Use comparison sites and find out how to layer (combine coupon codes, rebates, discounts).

Always be on the lookout for a good deal even if you don’t need the item right away. One shopping seizes the deals and then stores them for later use as gifts.Even if you don’t do much online shopping there are some sites that will compare product prices at stores in your area. One example is shoplocal. Subscribe to mailing lists. Yes, you’ll get lots of junk, but you could also get some great coupons. That is how I got a 30% off coupon for Old Navy/Gap/Banana Republic. If you just can’t seem to find a good deal, ask for help. There are lots of sites with forums where people post questions or requests for coupon codes. A couple include fatwallet.com and slickdeals.net

Turkey-Swiss-Guac Burger

Ingredients:
1 lb ground Turkey
4 slices of reduced fat Swiss cheese
4 white-wheat hamburger buns
4 tbsp of Wholly Guacamole
1/2 tsp salt
1/2 tsp black pepper
4 tbsp Ortega chopped green chilies
2 tomatoes (sliced)
1 red onion (slicked)

Directions:
Mix the turkey, salt, and pepper and shape into 4 patties.

Preheat grill, grill pan, or cast-iron skillet. Cook the patties over medium-high heat until lightly charred on the outside, about 4 minutes, then flip. Place a tablespoon of the chilies on top of each patty, then cover with a slice of Swiss. Cook until the patty is firm, about 8 to 10 minutes total.

Dress buns with tomato and onion slices (if you are an onion fan), top with the burgers and slather with guacamole.

Makes 4 servings @ $3.76 per serving before coupons.

I also found a great Smoothie Recipe from one of my favorite blogs $5 Diners.
Here is a recipe for:

Mango Raspberry Smoothie

Ingredients:
1 cup frozen mango
1 cup frozen raspberries
1/2 cup milk
3 1/2 cups of water
2 Tbsp ground flaxseed

Directions:
1. Add fruit, flaxseed, milk and water to blender. Blend!

Makes about 32 oz. of smoothie…enough for 4 cups!

Money saving tips: Turkey burgers are not only healthier than hamburgers but you can save a lot of money on ground turkey verses ground beef. Head to Target and take advantage of this weeks sales. If you buy a bag of Archer Farms Tortilla chips you get a free jar of salsa which is a good appetizer with the Turkey burgers. Top this tasty meal off with the smoothie with raspberries on sale for $.99 at Kroger. Always Always Always check coupons before heading to the store. Enjoy!

Boneless Chicken Wings
Ingredients:
1 pound of skinless chicken breasts
1/2 cup Frank's Red Wing Sauce (or any wing sauce you prefer)
1/8 tsp of Cayenne pepper
1/2 cup 2% plain yogurt (a yogurt based version of the usual wing dipping sauce. By using this version you reduce the extra calories)
1/2 tsp garlic powder
1/2 tsp black pepper
1/4 cup blue cheese
Worcestershire sauce
1 Tbsp white wine vinegar
16 celery sticks.

Directions:
Cut each chicken breast into 1/2" thick strips. Mix the chicken strips, wing sauce, cayenne pepper, garlic power, and black pepper in a large sealable bag and let marinate in the refrigerator for at least 30 minutes up to 4 hours.

Preheat grill or broiler. Remove strips from the bag and cook for 3 to 4 minutes a side until lightly browned all over.

Combine the yogurt, blue cheese, a few shakes of Worcestershire sauce, and vinegar. Serve the wings with the blue cheese dressing and the celery sticks on the side..

Makes 4 servings at about $2.69 per serving before chaching coupons. Be sure to check the coupon bank heading to the store.

Chicken Caesar Salad
Ingredients:
11/2 cups shredded chicken (To save money use the left over chicken from the boneless chicken wings.. You may need to double the recipe for the wings depending on the number of servings needed)
1/4 cup Newman's Own Lighten Up Caesar Dressing (If you aren't a Caesar fan use the dressing of your choice keeping the flavor of the chicken in mind)
2 whole wheat pitas cut into wedges tossed with olive oil and toasted.
olive oil (for the pitas)
1 head of romaine lettuce roughly chopped
1/4 cup grated Parmesan cheese
cracked pepper

Directions:
Combine the chicken, romaine, dressing, and Parmesan cheese. Mix thoroughly until all leaves are evenly coated. Serve the salad with the pita croutons and desired amount of cracked pepper.

Makes 4 servings at $2.13 per serving before coupons. Remember to check the coupon bank.
